Chef Pietro Mangani Takes the Helm at The Pavilions Phuket's Alto Italian Restaurant & Cocktail Bar

Chef Pietro Mangani has made his Asian culinary debut at the exemplary and re-launched Alto Italian Restaurant & Cocktail Bar at The Pavilions Phuket.  

Chef Pietro’s appointment to head up the luxury resort’s restaurant heralds an elevation of contemporary cuisine at The Pavilions Phuket and brings a new modern twist to traditional Italian dishes. Elegantly positioned at the pinnacle of the clifftop resort, Alto Italian Restaurant offers a glamourous dining experience, complete with panoramic landscape and sea views.  

With 10 years’ experience in the culinary industry across Europe, Chef Pietro’s skills were honed in the kitchens of Acquamore, Cavallini and Madeiterraneo restaurants in Italy; Lavanda e Rosmarino in Greece; Aigua and Quique Dacosta restaurants in Spain; and Margot in London.  

During his exceptional career, Mangani has worked alongside an array of legendary Michelin-starred chefs, including Heinz Beck, Riccardo di Giacinto and Quique Dacosta.  

Of his new appointment, Chef Pietro said, “For me, the kitchen is a space for conveying my personality through evocative flavours and beautiful plating. I’m excited to bring my creativity and flair to Phuket’s Alto Italian Restaurant & Cocktail Bar.”  

Echoing the fine dining experience of its Roman forebear, ALTO at The Pavilions Rome, The First Musica, Alto Italian Restaurant’s extensive menu uses creative ingredient combinations to elevate Italian classics. Chef Pietro’s Spaghetti al Nero incorporates surprising pops of pistachio, while his Cacio e Pepe con Tartufo is a truffle-topped rendition of the Roman classic.  

Breaking from tradition, the menu also sees local Thai produce and international influences incorporated into the dishes. The Polpo Arrosto is a quintessential roasted octopus but served with chickpea hummus, pak choi, and Lucian sauce. Caught off the coasts of Thailand, Chef Pietro’s Dentice Rosso alla mediteranea (Layan red snapper) is cooked with tomatoes and capers and laid onto garden vegetables from Chiang Mai, while his signature tiramisu brings the menu to a classically Italian conclusion. 

Open to both guests and non-guests of The Pavilions Phuket, Alto Italian Restaurant delivers a sumptuous dining experience, accompanied not only by fine wines and Italian-inspired cocktails but also exceptional views across Phuket’s dramatic, lush landscapes and the glittering Andaman Seas can be seen on the horizion. 

The launch of Alto Italian Restaurant & Cocktail Bar at The Pavilions Phuket follows the success of its predecessor, ALTO, located on the rooftop of The Pavilions Rome, The First Musica.
